Woodchuck Butternut Squash Soup… It’s What’s for Dinner

It’s 5 o’clock. Works over, and you’re what they call… hangry. You realize Fall has set in as you sit with a lingering chill in your car. Now there’s only one thing on your mind… SOUP! Warm and delicious, any savory recipe will do. Well, let’s try this one on for size.

Woodchuck® Fall Harvest Butternut Squash Soup!

Strong apple notes with a hint of cinnamon and nutmeg, the Woodchuck Seasonal Fall Harvest makes a great addition to this smooth and mouth-watering recipe. Warm up that core and give it a try!

 Ingredients:

  • 3 ½ cups cubed and peeled butternut squash
  • ¾ cups of chopped carrots
  •  ½ cup of chopped sweet onion
  • 1 tablespoon of butter
  • 1 ½ cup of chicken broth
  • 1 cup of Woodchuck Fall Harvest Cider
  • ¼ cup of half & half
  • 1/8 teaspoon of salt

Recipe:

In a large saucepan, melt the butter and sauté the butternut squash, carrots, and sweet onion for about 10 minutes. After, add the chicken broth and Fall Harvest Cider to the saucepan and bring to a boil. Once you see those rapid bubbles, cover, reduce heat to low-medium, and simmer for about 30 minutes (alter the temperature accordingly).

After your mixture has simmered into savory goodness, remove from heat and add the half & half and salt and pour into your preferred blender. (KEEP IN MIND: depending on the blender, you could see a good amount of splatter, so cover with a dish towel if necessary!) Once ready, blend away until smooth, or your desired consistency.

Grab a couple of bowls, toast up that French baguette, grab a seat in front of the fire, and enjoy!
