Woodchuck Amber Cider Cupcakes

Some bring the bottles into their craft, but some throw the cider right into their artistic genius! We always get excited to see Woodchuck used to make us delicious recipes, and here’s a mouth-watering one from our fan, Staci C. Cheers Staci, for these amazing Woodchuck Amber Cider Cupcakes!

Woodchuck Amber Cider Cupcakes

Ingredients

For Cupcakes:

  • 1/2 cup butter
  • 1 cup sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 1/2 cup Woodchuck Amber Cider
  • 1/4 tsp. nutmeg
  • 1/2 tsp. cinnamon
  • 2 cups flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt

For Frosting:

  • 1 stick butter
  • 1.5 cups powdered sugar
  • 3/4 cup brown sugar
  • 4 tbsp. Amber Woodchuck
  • 1 tsp. cinnamon
  • 1 tsp. vanilla

(If frosting feels a little thin just add more powdered sugar to get the texture you like.)

Instructions

  1. Preheat oven to 350°F
  2. Cream butter and sugar for about 5 minutes, then add egg and vanilla
  3. Mix in Woodchuck Amber Cider (This resulted in a weird curdling effect, but don’t worry about it!)
  4. In a different bowl, sift together the dry ingredients.
  5. Slowly pour the dry mixture into the wet mixture and combine – it’s okay if it’s still contains some little lumps but it should also take on a creamier consistency.
  6. Fill liners 3/4 of the way full and bake for 16-20 minutes
  7. To make the frosting, combine the butter, brown sugar, cinnamon, vanilla and  Woodchuck Amber Cider together
  8. Slowly add the powdered sugar
