Woodchuck Chewy Gingerbread Cookies

You’re looking for something tasty, chewy, and traditional. It’s time to try the Woodchuck® Chewy Gingerbread Cookies! Our flagship cider, Woodchuck® Amber, makes an appearance in this treat and brings some extra zest to a holiday favorite. Grab some spices and a 6-pack, and impress those bakers at the cookie swap! Yields two dozen cookies.

Ingredients

  • 1 cup Woodchuck® Amber Cider
  • 1 cup brown sugar
  • ¾ cup (or 1 ½ sticks) soften unsalted butter
  • ¼ cup molasses
  • 1 egg
  • 2 ¼ cups of flour
  • 2 tsp. baking soda
  • ½ tsp. salt
  • 1 tbsp. ground ginger
  • 1 tbsp. ground cinnamon
  • 1 ½ tsp. ground cloves
  • 1 ½ tsp. nutmeg
  • ½ tsp. ground allspice
  • 2 tbsp. granulated sugar

Recipe

Before you’re tempted to drink it, bring your Woodchuck® Amber to a boil over medium-high heat in a saucepan. Boil the cider down to about 2 tbsp. which will take approximately 10 minutes. Take off heat and let completely cool to room temperature.

In a bowl, combine the brown sugar and butter. Blend until light and fluffy. Once cooled, add the boiled down cider, molasses, and egg. Blend until thoroughly mixed.

In a separate bowl, combine the flour, baking soda, salt, ground ginger, cinnamon, cloves, nutmeg, and allspice (all remaining ingredients EXCEPT the granulated sugar!). Sift the ingredients together.

Slowly add the dry mixture to the wet ingredients, and mix well with a large spoon (or get dirty and use your hands!) until the makings are dough like. Mold into a nice dough ball, and refrigerate for at least 2 hours.

Once ready to bake ‘em up, take out the dough and bring to room temperature. While the dough is softening, preheat the oven to 350°. Put the 2 tbsp. of sugar into a shallow bowl.

Roll the dough into 1 to 1 ½ inch balls. Roll the balls in the sugar bowl, coating completely, and place on a cookie sheet covered in parchment paper about 2 inches apart. Once preheated, stick in the oven for 8-10 minutes. Take out and let sit until cooled.

Pour yourself one of the remaining ciders in your 6-pack, throw on a holiday flick, and enjoy!
